Pandan Coconut Chia Pudding

Ingredients

  • •4 tbsp chia seeds
  • •250ml full-fat coconut milk
  • •2 pandan leaves, knotted (or a drop of pandan extract)
  • •Pinch of salt, a few drops of stevia

Method

Warm the coconut milk with the pandan leaves for 3 minutes and let it cool. Remove the leaves, stir in chia, salt and stevia, and refrigerate overnight. Top with toasted coconut flakes.

Hainanese Poached Chicken with Ginger-Scallion Cauli Rice

Ingredients

  • •2 chicken legs, skin on
  • •1 head cauliflower, riced
  • •Thumb of ginger, 3 stalks spring onion
  • •Sesame oil, salt, chicken poaching stock

Method

Poach the chicken gently in salted water with half the ginger for 25 minutes; rest and slice. Sauté the cauli rice in the fatty stock with sesame oil. Pound the remaining ginger and spring onion with salt and hot oil for the classic dip — skip the sweet chilli.

Keto Laksa Zoodle Bowl

Ingredients

  • •2 zucchini, spiralised
  • •200g prawns
  • •2 tbsp laksa paste (check label: no added sugar)
  • •400ml coconut milk, 200ml stock
  • •Beansprouts, laksa leaves

Method

Fry the laksa paste until fragrant, add coconut milk and stock, and simmer 10 minutes. Poach the prawns in the broth, pour over raw zoodles and top with beansprouts and torn laksa leaves. The zoodles soften in the hot broth without going soggy.

Nutritional Yeast “Cheese” Kale Chips

Ingredients

  • •1 bag kale, stems removed
  • •2 tbsp olive oil
  • •3 tbsp nutritional yeast flakes
  • •Salt and smoked paprika

Method

Massage the kale with oil, then toss with yeast flakes, salt and paprika. Bake at 150°C for 12–15 minutes until crisp, watching the edges. Cool fully before storing airtight — Singapore humidity softens them fast.

Sparkling Electrolyte Limau Cooler

Ingredients

  • •1 scoop Electrolyte Powder (Lemonade)
  • •300ml chilled sparkling water
  • •Juice of 1 calamansi lime
  • •Mint leaves and ice

Method

Dissolve the scoop in a splash of still water first, then top with sparkling water, calamansi and mint over ice. The zero-sugar answer to a hawker-centre lime juice.

Sambal Butter Grilled Fish with Kang Kong

Ingredients

  • •1 whole seabass or 2 fillets
  • •2 tbsp butter, 1 tbsp sambal (no added sugar)
  • •1 bunch kang kong, garlic
  • •Lime to finish

Method

Mash the butter with sambal and spread over the fish. Grill or air-fry at 200°C for 12–15 minutes. Flash-fry the kang kong with garlic in the pan juices and finish everything with lime.
